Palmiers, also known as Elephant Ears, are traditionally a french cookie made with puff pastry dough and sugar. They are buttery, sweet and flakey. The best part about Palmiers (Elephant Ears) is how easy they are to make, and take less than 30 minutes. My grandma would make this for us whenever she wanted to whip up a quick snack for tea. However, you can also turn this into a dessert by adding ice cream, mousse, or cinnamon.
I have yet to master the puff pastry, so I like to use pre made Pepperidge Farm puff pastry. You will also need some parchment paper or foil. Make sure to allow the dough to thaw completely, this usually takes 30-40 minutes.
Preheat oven to 425°. Pour 1/2 cup of sugar onto a flat surface, such as a wooden board. Unfold one sheet of dough onto the board and sprinkle 1/4 cup of sugar on top. Use a rolling pin to roll the pastry sheet into a 13″ square, pressing the sugar into the dough.
Fold two opposite sides in towards the center.
Fold one more time.
Then fold top and bottom layers together, like closing a book. There should be 8 layers total.
Cut the pastry log in 1/2″ pieces and arrange on a cooking sheet lined with parchment paper or foil.
Bake for 6 minutes until bottom is golden brown. Flip cookies over with a spatula and return to oven for 4-5 minutes.
